Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 pound ground turkey
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 bell pepper, chopped (any color you prefer)
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped green onions, sour cream, cilantro

Instructions:

In a big pot, heat the olive oil over medium-low heat. Put in the chopped onion and cook for about 5 minutes, until it gets soft. After you add the chopped garlic, cook for one more minute

Break the ground turkey up with a spoon and add it to the pot. Cook until it turns brown.

Chop up bell pepper, kidney beans, black beans, corn, and add them to the bowl.

Add salt, pepper, ground cumin, paprika, dried oregano, and chili powder to the soup to make it taste better. Mix things together well.

Turn down the heat and let the chili cook for a while. Put a lid on top and let it cook on low heat for 30 minutes, turning every now and then.

Check the salt and make changes if needed. To get the right consistency, you can add a little water or soup if the chili is too thick.

Top it off with your favorite things, like sour cream, parsley, shredded cheese, or chopped green onions. Serve hot.

Enjoy your warm and tasty turkey chili!
