Ingredients:

  • 2 cups rolled oats
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins or chopped dried pineapple
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup or honey
  • 1/4 cup melted coconut oil or butter
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • Optional: cream cheese frosting for topping

Instructions:

Warm the oven up to 175°F (350°F). Set aside an 8×8-inch baking pan that has been greased or lined with parchment paper.

Put the rolled oats, grated carrots, chopped nuts, raisins or dried fruit, cinnamon, nutmeg, ginger, and salt in a big bowl. Mix everything together well.

Mix the melted butter or coconut oil, applesauce, vanilla extract, and maple syrup or honey in a different bowl using a whisk until the mixture is smooth.

Add the wet ingredients to the dry ones and mix them together until everything is well covered.

Spread the mixture out evenly and press it down hard into the baking pan that has been prepped.

Place the pan in an oven that has already been heated. Bake for 25 to 30 minutes, or until the bars are set and the edges are golden brown.

Before cutting into bars, take the pan out of the oven and let it cool all the way down.

As a special treat, you can drizzle or spread cream cheese filling over the top of the bars after they have cooled.

Serve and have fun! You can keep these bars at room temperature for up to 5 days in a container that doesn’t let air in. If you want to keep them longer, you can freeze them.

You can eat these carrot cake oatmeal bars as a quick breakfast on the go, a filling snack, or a healthy dessert. Have fun!
